Leftover turkey and ham pie

  • Left over meals made since Christmas:  6 (plus 3 more in freezer)
  • Post Christmas day food thrown away so far: Two bags of rocket and a punnet of sweaty mushrooms.

Finally, it had to happen. I could put off the inevitable no longer. Having already made a turkey and Ham bake the two collosi of cooked, Christmas leftovers demanded to make a final appearance in a pie before they bowed out in dishes of their own!

And what a noble pie this is, using leftovers and lonely bits of veg that thought they’d spend their final days decomposing in the garden composter. It even soaked up the last of the turkey and beef gravies…

Chop garlic, thyme and sage and fry in butter, add coarsely chopped carrot, celery and leeks. Sweat for for 5 mins or so to bring out their sweetness. Add the two gravies and a heaped teaspoon of mustard. Bring to the boil then simmer until thickened. Mix in a pie dish with chunkily chopped cooked turkey and ham. I added mine to the freezer to be topped with puff pastry on a cold January evening…
