Apologies in advance, this is a pretty mundane post however, it was such a good use of leftovers I fealt compelled to stick it in!
So the generous turkey has managed to make two more meals since the pie filling, this and a Balti. Again this recipe was inspired by a quick glance in the fridge to see what was lurking. I’d bought a pack of tortillas in just in case anybody was foolish enough to attempt to eat properly again on Christmas day but nobody had, they’d just been contented to graze on cheese and chocolate!
The keeper of the leftovers (the fridge) offered up, Brie, smoked wensleydale and Turkey. Do with these things what you will it said… There was enough Turkey for two stacked tortillas and enough cheese for one of each variety. We also had a jar of lingonberry jam so that lent itself to a Turkey, Brie and lingonberry stack and some spring onions which I put with the smoked wensleydale. The turkey was cut in slices and laid out on each tortilla like a mosaic, topped with the cheese and then the lingonberry/spring onions, then another tortilla. These were then put in the oven for around 20mins at 180 or until the cheese oozed out of the sides. I used a pizza wheel to cut into slices then scoffed the lot in seconds (aided by my family of trainee gluttons)
